Start with the processing label

Sella generally refers to parboiled rice. Parboiling treats rice with heat and moisture while it is still in its husk, before milling. Steam is a separate commercial processing description; ask the supplier to explain the exact treatment rather than assuming that every “steam” pack is identical.

What can change in the cooking pot?

IRRI explains that parboiled rice generally needs more cooking time and water than its non-parboiled counterpart and tends to be less sticky. These are broad tendencies, not a recipe for every Basmati product. Variety, processing and your cooking method also affect the result.

Compare like with like

Ask for the variety, processing type, pack size and batch identification for each option. If you compare different varieties at the same time as different processing types, you will not know which difference caused the result. Where possible, shortlist comparable samples.

Test the dish you actually serve

For a restaurant or caterer, prepare a small trial using the equipment and recipe used in service. Record dry weight, washing, soaking, water and cooking time. Assess grain separation, texture and aroma at the point the dish would normally be served. Follow the pack guidance first, then adjust one variable at a time.

Which variety and processing type is this? Is the sample representative of the quoted batch? What cooking guidance is available? What are the confirmed pack sizes, price basis and delivery terms? Keep the answers alongside your trial notes so a future order can be compared with the same specification.
